Piè Veloce Brux Cascade
DESCRIPTION
In this limited edition batch, we dry-hopped with Cascade hops at the end of barrel maturation to enhance the citrus, floral and spice components (already present in the aroma bouquet).
The wort of Piè Veloce Brux is elaborated with an important percentage of cereal substitutes (wheat and rye) and by a careful American hopping, both in bitterness and in aroma. Fermentation - carried out at the primary stage with Brettanomices Bruxellensis - and maturation (about four months) take place directly in wood: mainly in large barrels (3,000 liters) that once contained wine. This stage is followed by further aging in bottles or barrels to allow the Brett to continue to express itself.
The use of the specific Brett Brux strain interacts with the chosen hopping, giving fresh notes of white fruits, citrus and tropical reminiscences, as well as a delicate acidic touch and the intriguing funky components typical of brettanomyces (recognizable even in young beer, then invigorated with the refinement of time).
An accentuated dryness, a pleasant minerality and a present and elegant bitterness give the beer a great drinkability.
